Watermelon and Berry Spinach Salad: Healthy and Refreshing
Do you have plans for the holiday weekend? Whether you’ll be cooking out or picnicking (or both) you’re going to need an easy, tasty, and kid-friendly salad recipe. This spinach salad with watermelon, blueberries, and strawberries fits the bill perfectly.
Watermelon and berries meld wonderfully with fresh crunchy spinach. And, this salad has a healthy amount of mint, which lends a nice finish to the mix of flavors. I had originally intended to make this a red, white, and blueberry salad with the addition of feta, but found that I loved the flavors just as they were. That said, feel free to add some feta either for patriotic mojo or flavor.
If you do plan to take this salad on the road, consider separating the fruit and spinach until just before serving. I would also hold off on the dressing since salt can quickly leech the sweetness from the watermelon.
For the dressing I opt for a simple, light vinaigrette so as not to overwhelm the delicate fruit and herb flavors.
Watermelon and Berry Spinach Salad
for the dressing 1/2 cup strawberries, sliced
Toss the spinach and mint together in a large serving bowl. A few minutes before serving, fold in the fruit and gently drizzle with the prepared dressing. Add a little bit of dressing at a time, and stop when you think you have enough–this salad is great with just a hint of dressing.
Garnish with a sprig or two of mint and serve.
